Concept Definition Baker’s Percentages are a notation method where every ingredient is expressed as a percentage of the total flour weight. Unlike standard recipes where everything adds up to 100%, in baking, the flour is always 100%. All other ingredients (water, salt, yeast) are calculated relative to the flour.

The Science: Hydration Structure Baking is chemistry. The ratio of water to flour (Hydration) dictates the structure of the crumb (the inside of the bread).

  • Low Hydration (50–60%): Tight, dense crumb (e.g., Bagels, Pretzels). The gluten network is stiff and holds its shape easily.
  • High Hydration (75–85%+): Open, airy, irregular crumb (e.g., Ciabatta, Sourdough). The excess water creates steam during the “oven spring,” expanding the gluten network violently to create large holes.

Practical Application: The Universal Formula. Using percentages allows you to scale a recipe up or down perfectly without doing complex math.

  • The Formula: (Weight of Ingredient / Total Weight of Flour) × 100 = %.
  • Example: If you have 1000g of flour and you use 750g of water, you have a 75% hydration dough.

Practice Exercise: The “Scaling” Test

Goal: Create a simple rustic loaf using a 70% hydration formula.

  1. Start with Flour: Measure 500g Bread Flour. (This is your 100%).
  2. Calculate Water (70%): 500g × 0.70 = 350g Water.
  3. Calculate Salt (2%): 500g × 0.02 = 10g Salt.
  4. Calculate Yeast (1%): 500g × 0.01 = 5g Instant Yeast.
  5. Action: Combine, mix, and observe how this hydration level feels compared to a standard sandwich bread (usually 60%).
